Matcha tea gember Langue de Chat

 

3 egg yolks
90 gr sugar
3 egg whites
pinch of salt
75 gr flour
15 gr cornstarch
5 gr ginger
10 gr matcha tea
 Procedure :
Preheat the oven to 180 °C
 

line a baking tray with baking paper


put the egg whites and the salt in another bowl and beat until stiff with a mixer, place in the fridge so that it remains firm  

beat the egg yolks with the sugar until frothy in a bowl
sieve the flour, the cornstarch, the ginger and the matcha tea and mix them into the egg yolks with a spatula.


then add the egg whites to the egg yolk mixture in a piping bag

put the mixture in a piping bag with a smooth nozzle 2 centimeters in diameter and spray the cookies about 8 centimeters long on the baking sheet keeping enough space, back the matcha tea cookie +- 18 minutes, until golden brown. Let them cool on a wire rack.
