Spaghettini al Nero di Seppia con Scampi, Asparagi e Crema al Pesto di Zafferano

Ingredienti
60 g di Spaghettini al Nero di Seppia La Molisana
50 g di scampi sgusciati (oppure gamberi tigre)
25 g di punte di asparagi verdi
5 punte intere per la decorazione
2 asparagi tagliati in 4 mezze punte da unire alla pasta
45 g di Pesto Tigullio allo Zafferano
75 g di panna fresca
3-4 g di olio all'annatto fatto in casa
Un pizzico di peperoncino turco affumicato
Sale q.b.
Acqua di cottura della pasta q.b.
Marinatura degli scampi
Condire gli scampi con l'olio all'annatto, un pizzico di peperoncino turco affumicato e poco sale.
Lasciare marinare per circa 10 minuti.
Preparazione degli asparagi
Sbollentare rapidamente gli asparagi in acqua salata oppure saltarli brevemente in padella.
Tenere da parte le punte destinate alla decorazione e le mezze punte che verranno aggiunte alla pasta.
Cottura degli scampi
Scaldare una padella a fuoco vivace.
Rosolare gli scampi per 1-2 minuti per lato, secondo la dimensione.
Aggiungere gli asparagi negli ultimi istanti di cottura.
Tenere da parte.
Crema al pesto di zafferano
In un pentolino unire la panna fresca e il Pesto Tigullio allo Zafferano.
Scaldare delicatamente senza portare a ebollizione.
Aggiungere poca acqua di cottura della pasta fino a ottenere una crema liscia, vellutata e lucida.
Cottura della pasta
Cuocere gli spaghettini al nero di seppia al dente.
Conservare un po' di acqua di cottura.
Scolare la pasta.
Mantecatura
Versare gli spaghettini nella crema allo zafferano.
Aggiungere le 4 mezze punte di asparago.
Mescolare delicatamente fino a ottenere una perfetta emulsione.
Impiattamento
Distribuire circa 8-10 g di crema sul fondo del piatto.
Con l'aiuto di un mestolo formare un nido alto e arrotondato di spaghettini.
Aggiungere una piccola quantità di crema sulla sommità.
Posizionare una punta di asparago verticale al centro.
Tagliare lo scampo a metà nel senso della lunghezza lasciando la coda unita per creare un elegante effetto farfalla.
Adagiare lo scampo sopra il nido di pasta.
Disporre le altre punte di asparago intorno alla base.
Completare con qualche goccia di olio all'annatto.
Servire immediatamente.
Risultato
Un piatto elegante dai forti contrasti cromatici:
il nero intenso degli spaghettini al nero di seppia;
l'oro della crema al pesto di zafferano;

la dolcezza marina dello scampo.
------------------------------------Squid Ink Spaghettini with Scampi, Asparagus and Saffron Pesto Cream
Gourmet serving – 1 person
Ingredients
60 g La Molisana Squid Ink Spaghettini
50 g peeled scampi (or tiger prawns)
25 g green asparagus tips
5 whole tips for garnish
2 asparagus spears cut into 4 half-tips to mix with the pasta
45 g Tigullio Saffron Pesto
75 g heavy cream
3–4 g homemade annatto oil
A pinch of smoked Turkish chili
Salt, to taste
Pasta cooking water, as needed
Marinating the Scampi
Season the scampi with the annatto oil, a pinch of smoked Turkish chili and a little salt.
Leave to marinate for about 10 minutes.
Preparing the Asparagus
Briefly blanch the asparagus in salted water or quickly sauté it in a hot pan.
Set aside the tips intended for garnish and the half-tips that will be mixed into the pasta.
Cooking the Scampi
Heat a frying pan over high heat.
Sear the scampi for 1–2 minutes per side, depending on their size.
Add the asparagus during the final moments of cooking.
Remove from the heat and reserve.
Saffron Pesto Cream
In a small saucepan, combine the heavy cream and the Tigullio Saffron Pesto.
Warm gently without bringing to a boil.
Add a small amount of pasta cooking water until a smooth, silky and glossy cream is obtained.
Cooking the Pasta
Cook the squid ink spaghettini until al dente.
Reserve a little cooking water.
Drain the pasta.
Finishing the Dish
Transfer the spaghettini to the saffron pesto cream.
Add the 4 half-asparagus tips.
Toss gently until the pasta is evenly coated and perfectly emulsified.
Plating
Spread about 8–10 g of the cream on the bottom of the plate.
Using a ladle, form a tall rounded nest of spaghettini.
Add a small touch of cream on top.
Place one asparagus tip upright in the center.
Slice the scampi lengthwise while keeping the tail attached to create an elegant butterfly effect.
Place the scampi on top of the pasta nest.
Arrange the remaining asparagus tips around the base.
Finish with a few drops of annatto oil.
Serve immediately.
