these muddy freshwater snails smell bad, so you have to de-purge them before eating them
you rinse the frozen snails in hot water and plunge them into boiling salted water for 20 minutes, after 20 minutes of cooking you drain them in a colander throw away the cooking water that smells bad, rinse them well then you cook them again for 20 minutes
so you cooked them twice 20 mn in salted water and rinsed twice , they are now ready to use
now put them in the the Basic vegetable broth Brussels way , for 20 mn more is 60 mn in total and they are ready to consume in anyway you want now
