My Version revisited of Caesar Salad  with smoked Chicken-breast







 
INGREDIENTS FOR
2 persons
2 hard coked eggs
2 smoked chicken breasts , or baked French semi Organic guinea fowl
4 slices of toast bread
cut into cube
1/2 head escarole 
2 Brussels chicory 
12  capers
2 big capers cucunci  
cherry tomatoes 
anchovy fillets in oil or  anchovy fillets cream with sambal
parmesan cheese flaks
olive oil - clarified butter to backing the croutons
pepper and salt if needed

For the mayonnaise:
1 tbsp mustard
2 egg yolks
350 ml canola or  sunflower oil

whip the mayonnaise
 
then a few drops of Worcestershire sauce
17 gram vinegar water from the capers
and 20 gram tarragon in vinegar  
1 splash of warm water
 pepper and salt
