the guinea fowl cooked in the oven for 45 minutes, with the potatoes bake in the oven, covered with aluminum foil for 30 minutes at 220 degrees celcius, then 15 minutes without the aluminum foil at 220 degrees celcius

ingredients:
butter, shallot, Irish scotch whiskey , cream, irish whiskey cheese, demis glace, tarragon, salt pepper
procedure
finely chop the shallots, brown them in the butter, deglaze them with the Scotch whisky,
add the fresh cream, add the the Irish whiskey cheese, using a fork melt the cheese, add demis glace, add
pickled or fresh tarragon, salt-pepper
reduce the sauce
