Paccheri con Guanciale, Indivia Belga e Besciamella

 


ingredients :

pasta paccheri, Belgian endive, bacon Guanciale, béchamel, at your taste,
provolone cheese, gruyere, emmental, or mozzarella for pizza
a nice firm mozzarella that does not contain water
fresh liquid cream
salt and white pepper,grated nutmeg

procedure
cook the pasta  paccheri in salted water,
make a liquid béchamel, and put aside
cook Belgian endive in salted water,cut into large cubes and set aside
in a pan, brown the guanciale, remove the excess fat, add the Belgian endive cubes to the pan,
add a little béchamel and a little fresh cream, and grated nutmeg,
reduce the sauce
now add the cheese you have chosen,mix everything well and serving 

Ps
you can also use pancetta instead of guanciale,

and for decoration finish touch, i used Four Seasons Pepper
