Guanciale nduja gnocchi

 





ingredients :
guanciale
white wine
cooking cream
Nudja
gnocchi
salt, chili peper if needed
pecorino  
 
 procedure
in a frying pan without fat put the bacon or guanciale to sear
set aside excess fat in a small bowl,
if necessary you add a little of this fat, to the preparation once almost finished

deglaze the bacon or guanciale with a little white wine,
once the white wine has reduced add the cooking cream,
then add a little Nduja Calabrese to your liking,use a silicone Scraper
to make a nice deep orange color, reduce the sauce by half.
in the meantime in water, cook the gnocchi, as soon as the gnocchi rise to the surface,
drain and put the gnocchi in the pan with the sauce, reduce to suit,
add a little bit fat from the bacon bacon that has been browned to enhance the taste,
mix well with pecorino and add little red chilli (if needed)
and finish
